Purple Prairie Barley originated in Africa 10,000 years ago and packs 15% protein in its cholesterol-fighting beta glucans. This barley has a sweet, smoky flavor and, with a low glycemic index, acts as a substitute to whole grain.
Best if soaked overnight and cooked for 30 minutes or simmered for an hour. Tastes best with salads, soups or chili and can be ground into flour for muffins, pancakes or bread.
Timeless Food was founded in 1987 in Conrad, MT and strives to provide solely U.S. grown organic lentils, chickpeas, peas and ancient grains. The founders also wanted to introduce crops to the land that would slow soil erosion and build organic matter while encouraging soil moisture and supplying organic nitrogen fertilizer for future crops. These products are grown in the notoriously fertile “Golden Triangle Area” in the shadow of the Rocky Mountains. Timeless’s main office is located on the founder’s farm near Conrad, but production and storage can be found in Ulm.
